Matzah Meal Pancakes

Matzah meal pancakes were one of my favorite parts of Pesach as a kid. Who am I kidding, they still are. This is my first year making eggless passover dishes, so I was a little worried about this one, but it came out great! Not for the oil weary, but just have a friend make it and not tell you what’s in it.


Approx. 30 min. Serves 2

½ C Matzah Meal (about 2 sheets in the food processor until fairly fine)

½ C Water

3 T Water

2 T Starch (I use Arrowroot)

2 T Ground Flax Seed

2 T Safflower Oil plus more for frying

½ T Sugar

1 t Salt 


This is a pretty simple adaptation of the Manischewitz recipe. First make the “eggs.” Mix the starch and flax seed, then add in oil and 3 T of water and whip until smooth–no more oil on top. add all other ingredients, then mix and let sit 10 minutes. Whip occasionally to add air–this will make them fluffier.

Heat another 2 T of safflower oil in a pan on medium. Once up to temp, spoon in pancake sized portions. There should be enough oil to lightly fry them for a minute or so on each side. If you like them eggier, flip them sooner. For more of a passover doughnut texture, let them cook longer. Really good plain or with maple syrup.
